Ingredients

Roasted Tomatillo Salsa

  • 6 tomatillos
  • 2 jalapeños
  • 1 yellow onion
  • 4 cloves garlic
  • 1/2 bunch cilantro
  • 2 limes

Burrito

  • 24 pieces tater tots
  • 1 bell pepper
  • 3 plum tomatoes
  • 4 slices center cut bacon
  • 6 eggs
  • 1 cup egg whites
  • 1 lb 93% lean ground beef
  • 1 tbsp taco seasoning
  • 1/4 cup grated parmesan cheese
  • 6 large 'carb balance' tortillas
  • 6 tbsp light sour cream

Instructions

Roasted Tomatillo Salsa

  • Preheat the oven to 450F
  • Remove the husk from 6 tomatillos and give them a thorough rinse
  • Cut 2 jalapeños in half and remove the ribs and seeds
  • Peel 1 yellow onion and cut into quarters
  • Peel and crush 4 cloves garlic
  • Put everything together on a baking sheet, season with olive oil, salt and pepper
  • Put in the oven until roasted, about 40 minutes
  • When it is roasted, add everything to a food processor or blender with 1/2 bunch cilantro and the juice of 2 limes. Add salt to taste
  • If the salsa is too chunky, add 1 tbsp of water at a time until it reaches the desired consistency

Tater Tots

  • In the same 450F oven, add 24 pieces tater tots. Consider over-cooking them slightly to give them a good crunch!
  • After cooking, cut them into small pieces

Meat & Eggs

  • Dice 1 bell pepper and 3 plum tomatoes
  • Cut 4 slices center cut bacon into 1/2 inch pieces
  • In a medium bowl, whisk 6 eggs and 1 cup egg whites
  • In a large pan over medium heat, cook the bacon. After cooking, set aside
  • In the same pan with the leftover bacon fat, cook 1 lb 93% lean ground beef Season with 1 tbsp taco seasoning, salt and pepper
  • In the same pan, cook the eggs with the vegetables and add 1/4 cup grated parmesan cheese

Assemble

  • Layer the tomatillo salsa, light sour cream, bacon, ground beef, eggs, and tater tots over 1 large 'carb balance' tortilla (as tempting as it may be, try not to overfill it!)
  • Close the burrito and sear it seam-side down first in a pan over medium heat
  • Rotate the burrito to slightly brown on all sides
  • After browning, remove and top with chopped cilantro, sour cream and more salsa
