This Caprese Frittata blends Italian turkey sausage, fresh basil, and juicy grape tomatoes into a fluffy, savory dish that’s packed with protein. Ingredients

Homemade Salad Dressing

  • 2 tsp Dijon mustard
  • 1 lemon
  • 4 tbsp olive oil
  • 4 cups salad greens

Frittata

  • 1 shallot
  • 16 oz grape tomatoes
  • 1 cup fresh basil
  • 8 eggs
  • 1/2 cup egg whites
  • 1/2 cup cottage cheese
  • 16 oz Italian turkey sausage
  • 4 tbsp balsamic vinegar glaze
  • 1/2 cup freshly grated parmesan

Instructions

Salad Dressing

  • In a mason jar, add 2 tsp Dijon mustard, the juice of 1 lemon, 4 tbsp olive oil, and a pinch of salt and pepper
  • Cover with the lid and shake well until combined. Set aside

Mise En Place

  • Finely chop 1 shallot
  • Cut 16 oz grape tomatoes into quarters
  • Finely slice 1 cup fresh basil
  • In a large mixing bowl, whisk together 8 eggs, 1/2 cup egg whites, and 1/2 cup cottage cheese. Season with salt and pepper

Cook & Bake

  • Preheat your oven to 350F
  • In a large frying pan over medium heat, add 1 tbsp of olive oil
  • Add in 16 oz Italian turkey sausage. Season with salt and pepper
  • When the turkey is 90% cooked, add the shallots and grape tomatoes. Cook down for 3-4 minutes until the water from the tomatoes evaporates and the turkey is fully cooked
  • Mix in the egg mixture and combine well
  • Add fresh chopped basil on top
  • Bake in the oven until the eggs are set, about 15-20 minutes

Plate & Garnish

  • Once the frittata is cooked, remove from the oven
  • Add a slice to a plate and serve a handful of salad greens on the side
  • Top the salad with a drizzle of your homemade dressing
  • Top everything with fresh basil, grated parmesan and balsamic vinegar glaze
